You just need to bleed them well... That gets most of the wild taste out. Then.. It just takes proper seasoning and preperation. They are actually GREAT if cooked Cajun style, - Fried - Like Fried Turkey

I resent this remark, since I am Canadian and my former avatar was a goose!
Actually treat like any normal goose. 'Encyclopedia of Country Wisdom and Know How' I think is the book, it should tell you how to cook one's goose. I will check that book for you tomorrow and spell Encylopedia better then too. |

Duck and geese, as water birds, are both very fatty birds to cook and you need to make sure you raise them in the roasting pan so that the fat drains off them. They will smoke in the oven too if you do not regularly pour off the fat.

YES! Oregon slugs are edible according to the "SAS Survival Guide"(Collins Gem 1993).
It says they must be eaten fresh after the following special preparation: Starve slugs(or snails) for a few days, or feed them only herbs and edible greens for a few days so they can excrete poisons. Then place in a salt water solution to clear out guts, then boil for ten minutes adding herbs for flavor. (Page 119) Oh, wait, Canadian Geese? I don't know about those. Disclaimer: I have not tried this recipe. You do so at your own risk. Just a heads up there. |

It takes a little time, but I promise you won't regret it.
First, de-bone the breast meat. Then, depending on the size of the breast, slice into 1/4 inch pieces. Take those pieces and soak in a bowl of milk for at least 6 hours. Then, take these 1/4 inch slices and drain the milk thoroughly and stack them as deep as your container will allow with 2 layers of paper towels thick. Meaning, lay 3 slices on the bottom on top of a doubled up paper towel, followed by a doubled up paper towel and then another set of breasts etc... Cover, and place in the refrigerator for 72-hours. This allows the proteins to break down. Next, pull the slices out of the refrigerator and cut into shorter pieces. Sandwhich a piece of cream cheese between two slices of the breast. Add jalapenos if you desire more flavor. I prefer "Wright" brand bacon for this type of grilling. Wrap a piece of bacon around this sandwhich and secure with a toothpick. Make sure the grill isn't allowed to flair up while cooking as this will burn the bacon. About 13 minutes on each side should be adequate. This should melt in your mouth. This is the exact recipe I use for dove meat and plan to prepare for opening weekend of deer season here in Texas starting October 29th. Yes you can eat them. I have many,many times. They can be tough if you roast them in an oven. The legs and thighs are almost too tough to eat. Rather than smoke up the house with the in oven roast, I cook them outside on the grill. Take a whole bird and split it in half down the middle. Coat both the inside body cavity and the exterior skin side with coarse salt and cracked black peppercorns Place on a hot grill, cavity side down for about 8 min. Cover grill to keep flames down. Finish with skin side down another 4-5 min. Remove from grill and let it sit wrapped in foil for about 5 min. This lets the juices settle back down a bit. Slice the breast meat into pieces about 1/4" thick and arrange on a platter. Serve with wild rice and a Knorr green peppercorn sauce. Do not overcook or it will be too tough to eat!!!

Great thread, the wifey and I have discussed this a few times when we see big flocks of them hanging around our suburban wonderland.
Maybe you CAN eat one, but a question worth asking is would you want to unless you really had to? The ones I see must intake a LOT of toxic chemicals: living on golf courses, parks, eating trash, etc. I'm thinking they might be harmful to your health. But with that said, if the TSHTF I now have some recipes! |

I've tried to develop a taste for wild waterfowl (duck & geese) for many years, but despite different methods of preparation, they are just on the borderline of edibility! Now, if a guy was hungry, it would be a different story.

I have a friend that slices the breast meat thin, marinades it in jalapeno juice and then grills it. It's pretty good.

Canadians are the best tasting geese, with specklebellies next and any kind of brant (most call them snow or blue geese) last. Here's my favorite recipe for any waterfowl.
Pluck/gut. Place in ice chest full of ice. Drain water/blood daily and replace ice. Do this until you're just sure the meat is going to become rancid if you leave it another day (it won't, as long as you keep it on ice, but it looks bad). Wrap the goose/duck in al foil, spread your favorite spices and or sauces on the outside. Fill the body cavity with horse manure. Cook in a coal fire for a couple of hours. Remove from fire, remove manure from goose/duck. Discard waterfowl, eat manure. |
